Nowadays society feels threatened by the rapid development of cities and the diseases associated with environmental damage. Organic foods are introduced into the market in response to growing humans concerns of taking care of their health and the environment. The research tries to identify satisfaction factors among organic foods consumers of Cali – Colombia, through regression analysis. The main results reveal the existence of two principal satisfaction factors: good taste and fresh appearance. Results provide important elements to the organic food sector to be articulated into their production processes to improve the quality of their service and products
